Mushroom Rolls: A Quick and Diet-Friendly Dinner with Only 280 Calories!
The ingredients
We need: 400 grams of thinly sliced mushrooms; 20 grams of yogurt; 20 grams of light mayonnaise; three diced green peppers; two diced red peppers; two half-ringed onions; four pieces of tortilla; a pinch of sunflower oil; a pinch of thyme; and a pinch of salt and pepper.
For the sauce: 30 grams of tomato puree; 20 milliliters of sunflower oil; three cloves of garlic, minced; three grated tomatoes; salt and pepper to taste.
To garnish: 100 grams of grated scamorza cheese.
Mushroom rolls: preparation
First, pour the oil into a non-stick pan, then add the onions, brown them and add the mushrooms, then stir and cook with the lid on for five minutes.
Now add the green peppers and red peppers, mix again, cover again with the lid and leave to cook for another ten minutes, then season everything with salt, pepper and thyme.
At this point, add the yogurt and mayonnaise, mix, cover the pan and leave on the heat until the mushrooms and vegetables are tender.
Meanwhile, pour a drizzle of oil into a small pan, add the garlic, stir, and brown; then add the tomato sauce, stirring with a wooden spoon, add the grated tomatoes and mix well, and season with salt and pepper. Spread a little of the sauce on the bottom of a glass baking dish.
Now fill the tortillas with a handful of scamorza and a handful of mushroom and pepper filling, then roll them up and place them on the bottom of the pan, cover with the sauce and garnish with the remaining cheese.
Now it’s time to cook in a preheated oven for 20-25 minutes at 180 degrees.
