Baked beef cannelloni with creamy mozzarella sauce

Ingredients

For the beef filling:

1.2 kg ground beef (about 4-5 cups)
2 chicken eggs
Salt to taste
Ground black pepper to taste
Dried sweet paprika to taste
1 onion, finely chopped
For the sauce and pasta:

300g cannelloni pasta (about 2 cups raw)
2 chicken eggs
80g mayonnaise (about 1/3 cup)
300ml cream (about 1 1/4 cups)
300ml water (about 1 1/4 cups)
150g hard mozzarella, grated (about 1 1/2 cups)
Instructions

Make the beef filling:
In a large bowl, combine the ground beef, eggs, salt, pepper, and paprika. Stir well to combine.
In a separate skillet, sauté the finely chopped onion until soft and translucent, about 5 minutes. Add it to the beef mixture and stir again.
Make the cannelloni:
Preheat the oven to 375°F (190°C).
Fill the cannelloni pasta with the beef mixture. If you have a piping bag, use it for easier filling.

Arrange the stuffed cannelloni in a greased baking dish.
Prepare the sauce:
In a bowl, whisk together the eggs, mayonnaise, cream, and water until smooth and well combined. Pour the sauce over the stuffed pasta in the baking dish.
Grate the mozzarella and sprinkle it evenly over the pasta.
Bake:
Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for another 10 minutes until the cheese has melted and golden brown.
