Zucchini crepes are an unexpected recipe! They’re mini milk pancakes filled with julienned zucchini, delicious and filled with a stringy cheese filling.
Perfect for a light, low-calorie dinner, they’re only 180 calories each; they’re also ideal as a snack that won’t weigh you down but will give you renewed energy to finish the day. Those who enjoy a savory breakfast can also enjoy them as a complete, nutritious meal.
Even the little ones at home will appreciate your dish, even if they aren’t always fond of vegetables, because cooked like this they are irresistible.

Zucchini Crepes: Ingredients and Preparation
For this recipe you will need:
- 500g of courgettes
- 250 g of flour
- 300 ml of milk
- 2 eggs
- 150g of cheese
- 1 grated onion
- As much dill as needed
- As much olive oil as needed
- As much pepper as needed
- As much salt as needed
With these doses you will prepare 8 crepes.
Grate the zucchini into a bowl and cut them into julienne strips. You can find them pre-packaged in bags, but we recommend using the freshest, whole, and preferably organic ones to ensure a truly healthy and authentic product.
Crack the eggs into another bowl, then beat them with a hand mixer or a fork. Pour them over the vegetables and mix thoroughly. Peel the onion, slice it finely, and add it to the mixture. Season with salt and pepper, then add the milk and flour and mix with a spatula. Once the mixture is evenly distributed, brush a nonstick pan with a drizzle of oil.
Using a ladle, scoop out a small amount of the mixture, spread it over the bottom of the pan to form a perfect disc, and cook for 5 minutes on each side. Meanwhile, grate the cheese and sprinkle with dill.
Spread the mixture over your crepe and fold it in half. Wait for it to melt and slide it onto a serving plate. Continue this process until you’ve used all the ingredients.
