• 4 Skinless boneless chicken breasts (about 1 1/2 lb.)
• 1 teaspoon Italian seasoning mix
• 1 teaspoon Garlic Powder
• 1 teaspoon Smoked Paprika
• Sea salt and pepper
• 12 Asparagus stalks (end trimmed)
• 1 ounce Sun-dried Tomatoes (chopped)
• 4 slices Mozzarella Cheese
• 1 tablespoon Olive Oil
Preheat your oven to 400°F (200°C) so it’s ready for baking the stuffed chicken.
Place the 4 skinless boneless chicken breasts on a clean chopping board. Sprinkle each breast with:
1. 1 teaspoon Italian seasoning mix,
2. 1 teaspoon garlic powder,
3. 1 teaspoon smoked paprika,
4. Sea salt and pepper.
Carefully cut each chicken breast lengthwise to create pockets without cutting all the way through.
Trim and wash the 12 asparagus stalks. To stuff one slice of mozzarella cheese:
1. Add three sprigs of asparagus,
2. Include some chopped sun-dried tomatoes,
3. Roll up the cheese to hold everything inside.
4. Stuff each chicken breast with this mixture.
Close each pocket using toothpicks to hold them shut. Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat.
