Pork Tenderloin in White Wine
Tender, juicy, and full of rich flavor, Pork Tenderloin in White Wine is a classic dish that feels elegant while still being simple enough for a homemade dinner. The pork becomes incredibly soft as it cooks slowly in a flavorful white wine sauce infused with garlic, onions, and herbs. This recipe creates a delicious combination of savory and slightly creamy flavors that pair perfectly with mashed potatoes, rice, roasted vegetables, or fresh bread.
One of the best things about pork tenderloin is how quickly it cooks while still remaining tender and juicy. When combined with white wine, the meat absorbs incredible flavor and develops a rich aroma that fills the kitchen. This dish is perfect for family dinners, special occasions, or when you want to prepare something comforting yet impressive without spending hours cooking.
Ingredients
- 1 pork tenderloin (about 700–800 g)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 onion, finely sliced
- 4 garlic cloves, minced
- 1 cup white wine
- 1 cup chicken or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme or Italian herbs
- 1 tablespoon flour (optional, for thickening)
- Fresh parsley for garnish
Instructions
Step 1: Prepare the Pork
Pat the pork tenderloin dry using paper towels. Season it generously with salt, black pepper, paprika, and dried herbs on all sides. This seasoning helps create a flavorful crust while cooking.
Step 2: Sear the Meat
Heat olive oil and butter in a large skillet or pan over medium-high heat. Once hot, add the pork tenderloin and sear it for about 2–3 minutes on each side until golden brown. Searing locks in the juices and gives the meat a rich flavor.
Remove the pork from the pan and set it aside temporarily.
Step 3: Cook the Aromatics
In the same pan, add the sliced onion and cook for about 4–5 minutes until soft and lightly golden. Add the minced garlic and stir for another minute until fragrant.
Step 4: Add the White Wine
Pour the white wine into the pan and gently scrape the bottom of the pan with a spoon to release all the flavorful browned bits. Allow the wine to simmer for about 3–4 minutes so the alcohol cooks off slightly.
Add the broth and stir well. If you prefer a thicker sauce, mix the flour with a little water and add it to the pan.
Step 5: Finish Cooking
Return the pork tenderloin to the skillet. Spoon some sauce over the meat, cover the pan, and let it simmer gently for 20–25 minutes or until the pork is fully cooked and tender.
Occasionally spoon the sauce over the meat to keep it juicy and flavorful.
Step 6: Serve
Remove the pork from the pan and let it rest for a few minutes before slicing. This resting time helps the juices stay inside the meat.
Slice the pork tenderloin and serve it with the white wine sauce poured over the top. Garnish with fresh parsley for extra color and freshness.
This juicy pork tenderloin pairs beautifully with creamy mashed potatoes, roasted vegetables, pasta, or crusty bread for a comforting and satisfying meal.
