7 Up Pound Cake
INGREDIENTS:
1 1/2 cups softened butter
3 cups of sugar
5 eggs
1 teaspoon vanilla extract
2 teaspoons almond extract (or lemon)
3 cups all-purpose flour
1 cup of 7 Up, Sprite, or Sierra Mist
INSTRUCTIONS:
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a large bowl, combine the softened butter and sugar. Gradually add the sugar, 1 cup at a time, beating for 1 minute after each addition. Remember to scrape the sides of the bowl to ensure everything is well incorporated.
Once all the sugar has been added, continue beating for another 4 minutes until the mixture is light and fluffy.
Add the eggs, one at a time, mixing well after each addition.
Add the vanilla extract and almond (or lemon) extract, making sure they are evenly distributed throughout the batter.
Gradually add the 00 flour, alternating with the 7Up (or your preferred baking soda), starting and ending with the flour. Mix well after each addition, ensuring the dough is smooth and well combined. Remember to scrape the sides of the bowl as needed.
Pour the batter into a greased pan, making sure it is evenly distributed.
Bake in the preheated oven for about 1 hour – 1 hour and 10 minutes, or until the cake is firm to the touch and a toothpick inserted into the center comes out clean.
If using a loaf pan, this recipe will fill two pans. Bake for 50-60 minutes, until firm.
