The moist and creamy apple pie that is made with pudding

The ingredients

We need:

  • about 4 apples
  • 120 g of butter
  • 120 grams of sugar
  • 240 grams of flour
  • half a packet of baking powder (8 g)
  • 1 egg
  • 1 tablespoon of rum
  • 2 tablespoons of sugar
  • 1 teaspoon cinnamon
  • the juice of 1 lemon
  • 1 tablespoon cornstarch
  • 500 g sour cream (15% fat)
  • 40 grams of sugar
  • 1 package of vanilla pudding

The preparation

First, pour the butter into a tall, deep bowl. Then add 120 grams of sugar, an egg, a tablespoon of rum, 240 grams of flour, and 8 grams of baking powder. Then, mix these ingredients together with an electric whisk.

When we have a mixture that is not too uniform, we knead it with our hands in the bowl and after forming a sort of smooth and compact “ball”, we let it rest for thirty minutes in the refrigerator.

Now, lay out a sheet of baking paper on a pastry board: if you sprinkle a little water on the pastry board, you’ll prevent it from slipping.

Dust the dough with flour and begin working it with a third of the dough, first with your hands and then with a rolling pin. Once the dough is at least 24 centimeters in diameter, turn it out into a baking pan along with the parchment paper. Flatten it with your hands and then dust with flour.

Now, squeeze a lemon and then peel the apples and chop them into chunks. You’ll need about 600 grams. Pour them into a  bowl  and drizzle them with lemon juice. Then, sprinkle with two tablespoons of sugar, a teaspoon of cinnamon, and a tablespoon of cornstarch. Mix everything together and then pour the apples over the batter in the cake pan.

Now, using an electric whisk, mix half a kilo of sour cream, 40 grams of sugar, an egg, and a package of vanilla pudding in a   large bowl .

Once we have a cream, we pour it over the apples. We can now apply the remaining batter with a pastry bag. We can do this in a tart pattern.

At this point we just have to put it in the oven at 170 degrees for an hour.
