SOFT BAKED DOUGHNUTS!

These incredibly soft baked bomboloni can be filled with your favorite filling! Whether with custard or Nutella, these delicious bombs are a treat everyone loves!

Why make baked doughnuts?

Why do I “hate fried food!”? NO!

Why is it “better baked than fried”? NO!!!!

So why? Simple, they’re delicious! Soft and delicious with their filling, one leads to another, and they’re easy to make even by hand thanks to the dough that lends itself perfectly!

Ingredients

-500 g of 00 flour
-1 egg
-250 ml of milk
-50 g of lard or butter
-50 g of sugar
-12 g of fresh brewer’s yeast (or half a sachet of dry yeast)
-a pinch of lemon zest
-10 g of salt
-a pinch of egg yolk and milk (for brushing)
-a pinch of icing sugar

Preparation

1. Place the flour in a large bowl, then make a well in the center and add the sugar and grated lemon zest.
2. Place the yeast dissolved in a little room temperature milk in the center, then begin to mix with a fork.
3. Add the lightly beaten egg, then begin to incorporate the flour, then gradually add the milk, lard or softened butter, and finally the salt.
4. Knead for a long time by hand or in a stand mixer (both are equally good), then form a ball, place it in a bowl, cover with plastic wrap, and let it rise for an hour in a draft-free place; a turned-off oven with the light on is ideal.
5. To shape the bomboloni, you can choose between two methods:
– Take the dough and roll it out with a rolling pin to a thickness of 3 cm. Using a 6 cm pastry cutter (or a glass), cut out as many bomboloni as you like and place them on a baking tray lined with parchment paper.
Make balls of about 70/80 g each, then roll them under the palm of your hand until they are smooth and perfect, then place them on the baking sheet, pressing them lightly with your hand.
6. Cover with cling film and let them rise for a good hour.
7. Preheat the oven to 180°C.
8. Just before baking, brush the bomboloni with a mixture of egg yolk and milk, then bake for about 20/25 minutes until golden brown.
9. Remove from the oven.
