For this recipe you will need:
- 200 g all-purpose flour
- 3 g of salt
- 3 g of sugar
- 10 g melted unsalted butter
- 18 g minced garlic
- 25 g of spring onions
- 380 ml of water

Add the water a little at a time, stirring with a hand mixer until the mixture is smooth and free of lumps, but still fairly runny.
To cook the tortillas, grease a nonstick pan with a drizzle of oil and heat over high heat. Pour in two ladlefuls of batter, spreading them out with a wooden spoon to form a perfect disc, and cook first on one side, then the other until golden brown. When the first air bubbles begin to form, tap them with the spatula to enlarge them and form a single bubble, ensuring a soft, elastic, and moist interior.
