- In a large bowl, combine the date paste, dried cranberries, oats, chopped nuts, pumpkin seeds, and sesame seeds.
- Stir in the honey, if using, until the mixture holds together.
- Shape into small cookie rounds and place them on a parchment-lined tray.
- Melt the dark chocolate with the olive oil over low heat or in the microwave in short intervals, stirring until smooth.
- Dip each cookie halfway into the chocolate or drizzle the chocolate over the tops.
- Refrigerate for 1–2 hours, or until firm.
