ITALIAN SAUSAGE WITH PEPPERS AND ONIONS OVER GARLIC MASHED POTATOES

Ingredients :

For the Sausage and Vegetables:

1 lb Italian sausage links (mild or spicy)
2 tablespoons olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 large yellow onion, sliced
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
1/4 cup chicken broth or water

For the Garlic Mashed Potatoes:

2 lbs Yukon Gold or Russet potatoes, peeled and cubed
4 cloves garlic, peeled
1/2 cup milk or heavy cream (warm)
1/4 cup unsalted butter
Salt and black pepper, to taste

Directions :

1. Prepare the Garlic Mashed Potatoes:

Place potatoes and garlic cloves in a large pot of salted water. Bring to a boil and cook until potatoes are fork-tender, about 15-20 minutes.
Drain and mash the potatoes with the cooked garlic. Stir in warm milk and butter until smooth. Season with salt and black pepper to taste. Cover and keep warm.

2. Cook the Italian Sausages:

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 7-8 minutes. Remove the sausages and set aside.

3. Sauté the Peppers and Onions:

In the same skillet, add the remaining olive oil. Add the bell peppers and onions, cooking until softened and lightly caramelized, about 5-7 minutes. Stir in minced garlic, oregano, red pepper flakes, salt, and black pepper.

4. Combine and Simmer:

Return the sausages to the skillet with the vegetables. Add chicken broth and simmer on low heat for 10 minutes, allowing the sausages to finish cooking and the flavors to meld.

5. Assemble the Dish:

Spoon a generous serving of garlic mashed potatoes onto a plate. Top with sausages, peppers, and onions. Drizzle with pan juices for added flavor.

6. Serve:

Garnish with fresh parsley or grated Parmesan, if desired. Serve hot.
