- 3 potatoes
- 3 eggs
- 120g hard cheese cut into thin slices (such as scamorza)
- a tablespoon of extra virgin olive oil
- As much paprika as needed
- As much black pepper as needed
- As much salt as needed
Preparation
- First, crack the eggs into a bowl, add salt, pepper, and paprika, then beat them thoroughly with a hand whisk.
- Now peel and grate the potatoes into a bowl, pour the eggs over them, then mix with a spoon so that everything is flavored properly.
- Finally, oil a non-stick pan, add part of the mixture, spread it out evenly, fill it with the central slices of cheese, cover with the remaining mixture, add salt, cover with a lid and leave to cook on both sides for 10 minutes over low heat .
- Once cooked, cut into slices and bring to the table.
