Berry Yogurt Cake: Delicious but Low in Calories

Yogurt cake with berries and the scent of dates, a delight that is prepared  without flour, butter and sugar !

The sweetness comes from the date syrup, which you can easily replace with another syrup (agave or maple for example) or with honey or jam.

Ingredients

  • Yogurt, 400 g (plain);
  • Berries or blueberries, 70 g (you can also use frozen ones if you can’t find fresh ones, alternatively dark raisins);
  • Date syrup, 1 generous tablespoon + more to decorate;
  • Eggs, 4;
  • Corn Starch (Maizena), 40 g;
  • Almonds;
  • Vegetable oil.

Preparation

Line an 18cm baking pan with baking paper and brush with vegetable oil.

Preheat the oven to 170°C. Using the fan-assisted oven will ensure even cooking.

Crack the eggs into a bowl and add the date syrup. Whisk until the egg and syrup are combined.

Then add the yogurt and cornstarch. Mix with a spatula and then use a whisk to incorporate everything more easily. You should obtain a smooth, liquid mixture.

Pour it into the prepared pan and sprinkle with 50g of berries, distributing them evenly. Leave about 20g of them as a garnish after half an hour of baking.

Bake for 50 minutes at 170°.  The surface should be golden brown .

After half an hour, add the remaining berries, and start checking after 40 minutes. 50 minutes might be perfect, or you might need 5 more or less.

Remove from the oven and let cool.

Finishing touches.

Once cooled, brush the surface of the cake with a little date syrup and finish with a sprinkling of almonds.

All that’s left to do is  serve your soft  yogurt cake with berries and the scent of dates !
