5-Apple and 1-Yogurt Cake | My recipe has only 130 calories!
Apples are high in pectin, a natural fiber that helps control blood sugar levels because it allows for gradual absorption, meaning it doesn’t cause dangerous spikes.
But of course, apples don’t just contain pectin: they’re also rich in vitamin C. It’s no coincidence that “an apple a day keeps the doctor away”…
Apples take center stage in today’s recipe. It’s a delicious dessert that’s not too heavy—in every sense of the word, especially because it’s a satisfying treat with just 130 calories.
This is a very fun and easy-to-make apple and yogurt cake: excellent for breakfast (perhaps accompanied by an orange juice or a cup of latte), but also excellent for a children’s snack.
But let’s see the recipe.
The ingredients
You’ll need (for 12 servings): 5 apples; 200 grams of double-zero flour; 125 grams of plain or vanilla yogurt (basically a jar); 75 grams of stevia (or 150 grams of regular granulated sugar); 30 grams of butter; two eggs; a sachet of baking powder; powdered sugar to taste
The preparation
Preheat the oven to 180 degrees. Soak and wring out some parchment paper, which you’ll then use to line a baking sheet/cake pan. If you don’t want to use parchment paper, you can simply grease it with butter and then flour it.
Peel the apples and cut them into very thin slices. Crack the eggs into a bowl, add the stevia (or sugar), and beat with an electric whisk until pale in color and light and fluffy.
At this point, add the yogurt and then add the yeast and flour, which you will have sifted first: mix everything well.
Now place the apple slices on the bottom of the pan or cake tin and pour the previously prepared mixture over them: level the surface with a spatula.

Bake for about fifty minutes; before removing from the oven, you can do the traditional toothpick test. If the toothpick comes out with some moisture still in it, move the cake to the lowest rack in the oven and bake for another five minutes.
Serve after a generous dusting of icing sugar.
