Baked Potatoes with Spinach

A simple and comforting recipe that combines layered baked potatoes with sautéed spinach and melted cheeses.
Ingredients
- 4 medium potatoes
- 300g of fresh spinach
- 1 onion, chopped
- 2 cloves of garlic, chopped
- 100g of grated mozzarella cheese
- 50g of grated Parmesan cheese
- 3 tablespoons of olive oil
- Salt to taste
- Pepper to taste
- 1/2 teaspoon of nutmeg (optional)
Instructions
- Preheat the oven to 200°C.
- Wash, peel (if desired) and slice the potatoes thinly.
- In a frying pan, heat 2 tablespoons of oil and sauté the garlic and onion until golden brown.
- Add the spinach and cook until wilted. Season with salt and pepper and add nutmeg if using.
- In a baking dish, place a layer of potatoes, a layer of spinach, and some mozzarella. Repeat the layers.
- Finish with a layer of potatoes, drizzle with the remaining oil and sprinkle with Parmesan cheese.
- Cover with aluminum foil and bake for 30 minutes. Then remove the foil and bake for another 15–20 minutes until golden brown.
Notes
- Use frozen spinach if you don’t have fresh, drain it well.
- You can add béchamel sauce or cream for a creamier version.
- Store leftovers in the refrigerator for up to 3 days.
- Freezable for up to 2 months in individual portions.
