California Spaghetti Salad

 

 

Ingredients

  • 1 lb. spaghetti
  • 1 can olives
  • 1 o oz. container cherub or grape tomatoes
  • 1 cucumber
  • 1 large carrot
  • 1 avocado
  • ½ cup pepperoncini
  • 1 Tbs. Mrs. Dash seasoning salt
  • 1 Tbs. lemon pepper
  • 8 oz. Roasted Red Pepper Vinaigrette

Method

  1. Cook spaghetti in boiling salted water until al dente. Rinse in cold water and drain.
  2. Set aside and let cool.
  3. Cut tomatoes in half
  4. Peel and slice cucumber
  5. Drain olives and cut in half
  6. Peel and grate carrots
  7. Peel and cut avocado into chunks
  8. Slice pepperoncini
  9. Put pasta to large bowl with all your vegetables.
  10. Add seanioning and dressing and mix well.
  11. Chill for about 2 hours before serving.
